French macarons: a dessert that is hard to say but oh, so easy to eat! The macaron, pronounced mah-kah-RON, has an American cousin, the macaroon, pronounced mah-kah-ROON (the same way you say the “oo” in “zoom”). The close spelling and confusing pronunciation are where the similarities between these two cookies end! French macarons are cookies made from almond flour, egg whites, and sugar that are sandwiched together with pastry crème, ganache, or jam. Because they are made with almond flour, they are naturally gluten free. The simple ingredients also allow for a lot of creativity and variety with flavors.
Although they are known as a French dessert, macarons originate in Italy. Catherine de Medici brought the delicacy with her when she moved from Italy to France to become Queen in 1533. When she introduced this cookie to court, it was not yet being prepared as a sweet sandwich. The cookies were served more simply, but their unique crunchy-chewy texture fascinated court. During the French Revolution, the cookie went through its own revolution and it began to gain popularity with the masses outside of court. Soon after it’s rise in popularity, the confection transformed into what we know it as today: two almond meringue discs that are sandwiched together with a sweet filling. There is contention over who invented this manner of preparing macarons, but one thing is undisputed: they are DELICIOUS!
